Prawns in a Blanket
Tiger Prawns (king) 1.5kg.
Sun-dried tomatoes as needed.
Puff pastry (30x30) 3 sheets.
Eggs 3.
Flour 80g.
Poppy seeds as needed.
- Preheat you oven to 220 degrees Celsius.
- Boil the prawns in a pot until pink in color.
- Strain all the water and remove the heads and shells under running cold water…
- De-vein the prawns and place in a perforated shaving dish to drain remaining liquid.
- Roll out your pastry on a floured surface.
- Baste the pastry with sun dried tomatoes and then cut into strips.
- Wrap the top half of the prawn in a spiral pattern and place on a greased baking tray.
- Once done egg wash the pastry and decorate with poppy seeds.
- Bake in the oven for about 5-10 min.
- Allow to cool and serve.
