Prawns in a Blanket 27 August 2011


Prawns in a Blanket
Tiger Prawns (king)                 1.5kg.
Sun-dried tomatoes         as needed.
Puff pastry (30x30)          3 sheets.
Eggs                                             3.
Flour                                        80g.
Poppy seeds                   as needed.

  • Preheat you oven to 220 degrees Celsius.
  • Boil the prawns in a pot until pink in color.
  • Strain all the water and remove the heads and shells under running cold water…
  • De-vein the prawns and place in a perforated shaving dish to drain remaining liquid.
  • Roll out your pastry on a floured surface.
  • Baste the pastry with sun dried tomatoes and then cut into strips.
  • Wrap the top half of the prawn in a spiral pattern and place on a greased baking tray.
  • Once done egg wash the pastry and decorate with poppy seeds.
  • Bake in the oven for about 5-10 min.
  • Allow to cool and serve.
