Practical 25 August 2011

Our practical took place outside by the boma area again but this time we were only allowed to use an open fire we had 2 hours to complete this practical test. This weeks practical was all about the different rice types that was available to us. the rice i had receiver was glutinous rice which i had never made in my life, but I got some pointers from Chef Errol that it is a very starchy rise and it cooks very quickly and that i should wash it at least  2-3 times but when cooked correctly there is no need to wash it more then once. We got a chicken to do as well so i decided to make a chicken stock with the spine and innards of the chicken and the thigh's, wings, legs and breasts i marinaded and grilled it on the open fire next to the flat top. after my chicken stock was done i stained out the chicken, celery, carrots an onions which had been mire poixed into the water. i then cooked the rice in the chicken stock and added some whole peppers corns and salt so that it doesn't taste to watery... i washed my rice before cooking it to remove any excess starch. after it was done cooking i washed it  again and was a minute to late so i got a 2 for time management instead of  4, bummer. my over all score was 34 out of 50 and i came in second with Alon and Lilandi, Juan was first with a score of 36. 68% isn't that bad for something I've never done before, and it was completely improvised.
