we were all stressed this day since it was the first time that we had to make our own dish, plate it and garnish it.
Lilandi and i did the tomato duet which was a tomato soup with a sweet corn fondue.
The tomato soup was done from scratch and no thickening agents was added... The sweetcorn fondue how ever was basic as well, we made a basic bechamel with canned sweet corn... the way we plated it was cool. we poured 2 medium sized ladles quantities into the bowl then made an island in the center of the plate with 2 stripes in each side made from the bechamel island and then dropped 5 tiny sour cream filled choux pastries in the tomato soup area and one in the center of the sweetcorn fondue island.
