Thambuki bush cooking 12 may 2011
We started pretty early just to make sure we had all our equipment ready for the big function for Adriano and the management... Once we got to Thambuki we had to start a fire so that we could prepare for our dishes... When we all got there we unloaded all our equipment and packed them in a sufficient way. I started by making my own oven made out of foil the braai and the grills that had been supplied all i still needed were hot coals to heat up the oven. We started making our dishes at quarter past three and my team and I finished about half an hour before the people actually arrived. My team and i had made a butternut and sweet potato chowder with small sour cream 'mos bolletjies' then I made caramelized red onions in a balsamic reduction. the management loved the chowder and complimented my team and I on it. It was a success, we all had allot of fun cooking with what we had to work with and coped not having any electricity what so ever, the management was very impressed with our capabilities and said it was an amazing night for them...
